    I have read a little about the benefits of having one or more of your key words in your domain name to help with optimisation and improved SERPs

Does anyone have experience or evidience of this working?

Ya in my opinion it works. Suppose that you are targeting the keyword Web Hosting, then it would much better to use a domain name like webhosting.com or web-hosting.com you can use other extensions if .com is not available.
 
The point is to use your 2-3 important keywords in your domain name also.

Nowadays, keyword(s) in a domain name help a site rank better in MSN and Yahoo, In Google it's just one of the many factors that determine a site's ranking.

You bet. I've found using a dash to seperate two keywords is also helpful as well.
