Are you able to make your own shops, etc? Or sell stuff in the ones that already exist? If so, how?

No you can't make your own shop, there is only one shop and that is the GoogleCommunity shop. However, as Randy said, if you want to sell/buy something you could make a thread in the Marketplace forum and other members can reply to that.
