How does the cache in Google work?

Hi, I have this question and I appreciate if somebody give me some idea how it works.

A website accidentally published my name and all the contact number (in a PDF) file, I could search it througth google, and I got quite a bit of spam email from that. Afterthewebmaster removed my namefrom the PDF file,my nameis still searchable because it's cached. There was a line with the HTML link of the old file which still has my name showing up in the google search. Like the following,

I wonder how the cache thing works in google. willmy namestay thereforever or will the cached page be updated sometime within a time period. Is there anything I could do or the website admin could do to have it removed from the cache?
