Do apostrophe's play any role in keywords?

the Top keyword to my site is drivers ed but driver's ed is the 13th ranked keyword for my site. So it would be beneficial to use the keyword without the apostrophe or does it not even matter when it comes to search engines?

nothing at all.. bots don't read special characters.. they only read letters and some bots codes. keep that thing in your mind.

I think it does have an effect but not that big of a difference...choose your keywords wisely especially with apostrophes

Indeed, it has a big effect, change your target keywords with the one that doesn't use any special character.
