so say I put some keywords in and it gave me the results.. now do I try and use the results that came up with 2.5 million or the one that says 400k ?

the center column,, do i want words with larger # ?

Well if your keyword is "bluegrass music" then use the second image in your post.
The Google Suggestion Toolsuggests results for your keywords and individual words.
Ex - "bluegrass music"
Bluegrass music is the actuall keyword. where the result is - 2,800,000
The wordMusic is the breakup result - the result is 456,000,000

I would suggest you to use the keyword "bluegrass music"or similarkeywords that is shown in that second imagerather then using "music".

If your site is a newbie then firsttry to capitalise with a less competitive keyword, (by the time you collect good backlinks).
And then slowly move to more competitive keywords...

Well thats just a suggestion.
