Gmail signatures with colour!?

hello all.

I use two gmail accounts, both using signatures. I mainly use Firefox 2.0.0.2 and to a lesser degree Safari 2.0. When I use Firefox its very clear that I can re-colour my email signatures but its not so clear when using Safari.

1. Am I missing something obvious in safari?

2. [The main question] how can I set up my signature to automatically have the colours that I want to use rather than manually re-colouring for each message sent out?

If not, WHY? I recieve emails where signatures are automatically coloured.
