I recently turned one of my projects ( Language Wiki) into a standalone project on its own domain. So far the results have been pleasing (39+ pages in Google after only a week). Does anyone have any suggestions about which directories I should submit it too (not DMOZ, Language Wiki is still under construction and they don't really like that). I already have a sitemap (that dynamically updates) and some links in (but mainly from my personal website - http://michael-m.co.uk).

What are your suggestions?

Wasn't much help, it didn't list any language related directories.

I think you will struggle to find lot's of quality language directories, why don;t you try submiting to the language categories of general directories.
