You can have as many sites as you want, as long as they all follow the Program Policies.
You are only allowed one Adsense account.

yes, that's true. You can ad as many sites as you want. In fact, you don't need to ad sites to your Google Adsense account. Simply, put the code on new page and Google will find it out.
But strictly follow the Terms and Policies of Google and you are safe, earning more revenue.

Don't forget to adding channel for each of your site, so you can track the adsense performance of your sites! That would be helpful if you don't know where ads is the most effective for you!
